Easy Make-Ahead Chicken



If you are like me, you can eat carbs like they are going out of style, but it's getting healthy protein into our diets that's a little more difficult. The cooked proteins take more time in preparation, so unfortunately it's easy to just skip that ingredient when snacking or even at meal time.

Note: veggies with protein are very healthy and a great way to loose weight, gain energy and feel strong. Don't forget the veggies!

I needed to find a way to have healthy protein (not fried) on hand so I'd be more likely to eat that than unhealthy carbs. A couple months ago a friend of mine taught me just how quick and easy making chicken ahead really is.

My challenge with cooking chicken in the past had always been that I'd over-cook the darn thing and then it would taste more like rubber than chicken. But with this easy recipe, I have finally found a way to have chicken taste, like chicken is supposed to taste, yummy!

This recipe calls for a whole bag of chicken so you will have chicken on hand for a whole week or you can stick them in the freezer if you don't think you'll eat that much. It will save so much time to have them already cooked than cooking as you go through out the week.

Easy Make-Ahead Chicken Recipe

Step 1: Get a bag a frozen chicken breast at the store.

Step 2: Thaw it in the frig. (I've made this with frozen chicken too and it works fine).

Step 3: Fill up a large pot and heat on high until it comes to a rolling boil. Put all the chicken in the boiling water.

The water will stop boiling once you put in the uncooked chicken.

Step 4: Turn off heat and take all the chicken out of the pot (they will be coated white but raw inside).


Step 5: Turn water back on high and bring to a rolling boil. Put chicken back in boiling water.


Step 6. Put lid on and turn OFF the heat. Leave the pot on the hot burner for 45 minutes (60 minutes if you started with frozen chicken). Set a timer, leave it and do something else.

Tip: If you are in a hurry and are making stir fry or you want your chicken grilled, you can pull some pieces out during this time and make your current meal while the rest of your chicken is in the pot.

Step 7: Take chicken out of water for the second time, cut it in slices and put it in the frigerator or freezer for quick and easy meals.

We try to always use plastic containers instead of plastic bags.
This is cheaper and leaves less waste.

Step 8: Use the chicken stock for chicken soup or discard.


Now you have a bunch of healthy protein already made for meals and snacks.
