Raw Protein Bites
We have a new family favorite snack, Raw Protein Bites. My sister-in-law, Annie Lasater and I were experimenting while she was last out here for a visit. This is our yummy recipe. Hope you enjoy.
Oatmeal Currant Protein Bites
Makes approx. 3 dozen balls
1 C Natural Peanut Butter
1 Cup Raw Honey
2 TBSP Coconut Oil
1/2 C Flax Meal
3 C Rolled Oats
1/2 C Coconut Flakes
1/2 tsp Sea Salt
1 tsp Cinnamon
1/2 C Currants
1/2 C Coco Nibs
1. Mix first 3 ingredients: Peanut Butter, Raw Honey and Coconut Oil in food processor or by hand, if you want to build muscle.
2. In a large, separate bowl mix all the dry ingredients.
3. Pour wet mix on top of dry mix and stir. Wet mix will be thick. We get our hands into it to really get all the dry mix moistened.
4. Get a small cookie dough scooper or a TBSP and roll into balls.
5. Store in refrigerator or make a double batch and freeze some for later.

This recipe is so easy, even kids can make it. My 9 year old daughter made these. She is holding both the Oatmeal Currant Bites and the Chocolate Bites...YUM YUM!
